Pumpkin is still available in the market place and Thank God for that! Because, after a long working day, nothing can beat comforting taste of nice, creamy pumpkin soup. This is my pumpkin - rosemary soup. Only few ingredients and easy to prepare. Ingredients: 2 Tbsp unsalted Butter 2 Pieces rosemary sprigs 2 Cloves garlic 1 Onion Beef broth Butternut pumpkin Salt, papper, Cooking cream Nutmeg Add rosemary on melted butter and stir. Add chopped onion and chopped pumpkin. Stir and fry for couple of minutes. Add garlic and keep stirring. Mixture will become dry and you will need to add some water. Use hot water and add it gradually, by using small cups and only when previous water has evaporated. Cook for 15 minutes and then add beef broth. Cook for 8 – 10 minutes more. Season with salt, paper and nutmeg. Blend all the ingredients together and serve with few spoons of cooking cream.
