Chicken nuggets marinated in yogurt

Soft, tasty and so easy to make. And also, the good thing is that you don not use fat in this recipe, so it’s much healthier version for your family than regular nuggets you can find in the restaurants. My kids claim it’s much tastier too!
 
Cut boneless chicken, season with chosen spices and marinate it in regular yogurt overnight. 
When it comes to spices, I usually put some chilly, cumin, coriander, salt and paper. But you can season as you wish, you can try different combos and every time get different taste of nuggets. 
 
For coating you can use bread crumbs or cornflakes for crunchier bites. You can also mix some green spices in, as oregano for example.  
 
Heat oven on 190C 
 
All you need to do is to coat each peace of chicken with seasoned bread crumbs (or cornflakes), place it onto baking sheet and bake for around 30 minutes. Until it’s golden. 
 
You can serve it with fries, kid love it that way. But I love to make tortillas using chicken prepared this way.

Domaći nuggetsi marinirani u jogurtu

Mekani, sočni i preukusni. Dobra stvar je i u tome što ne koristite masnoću, pa su ovi domaći nuggetsi mnogo zdravija varijnta za vašu porodicu od restoranske verzije. Moja djeca kažu da su i ukusniji!
 
Pileća prsa isijecite na veće komade. Jedan komad pilećih prsa, izrežite na 4-5 komada. Marinirajte u običnom jogurtu uz dodatak začina. Obično stavim kim, coriander, chily, so i biber, no vi možete koristiti začine koje želite. Možete svaki puta mijenjati kombinaciju začina, po svojoj želji ili ukusu onih kojima ih spremate. Najbolje bi bilo da piletina prenoći u ovoj marinadi. Što duže stoji, to će biti mekša i sočnija.
 
Zagrijte rernu na 190 C. Svaki komad piletine uvaljajte  u prezlu ili izmrvljeni cornflex. Obično i u ovo stavim neki začin. Origano ili mirodjiju, ovisno o začinima koje sam koristila u marinadi. 
 
Komade piletine poredajte na papir za pečenje i pecite 30tak minuta. Dok ne porumeni, ali pazite da ne prepečete. U pravilu nemojte prelaziti 30 minuta.

Djeca ih vole uz pomfrit, a meni su draži u formi tortilla.

Lebanese Nachos

Nigela named it like this.  At our house, we make it very often and we love it very much. Ideal finger food for friend gathering or cozy family afternoons. 
 
For 4 – 6 portions: 
 
800g Beef meat (double minced)
1 Onion (chopped) 
3 Cloves garlic (chopped) 
1 Eggplant (middle size, cut into cubes) 
Spices: salt, pepper, dried chilly, anise seeds, cardamom, fennel seeds 
Olive oil 
 
Yogurt sauce: 
1 Big cup (around 400 gr) yogurt (Greek style) 
2 Tbs Tahina
Juice from 1\2 lemon 
Salt
1-2 Garlic cloves (minced)
 
Flatbread, tortilla bread or tortilla chips 
Plus: Pomegranate seeds and toasted pine nuts for garnishing 
 
Process:
Sate chopped onion on olive oil. Add in minced meat, garlic, egg plant, and let it cook for 15 minutes. Then season with necessary spices, put the lid over and cook for 15 more minutes. Don’t forget to stir and DO NOT add water. 
 
In the meantime, prepare yogurt sauce by mixing all ingredients together and heat over the steam. You can use microwave as well. In that case yogurt sauce can not stay longer in microwave the 2x20 sec (with pause in between to stir it). 
 
Serve with flatbread, toasted tortilla bread or tortilla chips. Garnish with pomegranate seeds and toasted pine seeds.

 Libanonski nachosi 

Nigela je ovako nazvala ovaj recept. Vrlo je zanimljiv I cesto ga spremam. Idealan finger food za druzenja ili opustena porodicna popodneva. 
 
Za 4 – 6 porcija 

Potrebno vam je: 
800g Juneceg mesa (izaberite namasni komad I zamolite da vam se prefašira dva puta) 
1 veća glavica crvenog luka 
3 čehnice bijelog luka 
1 patlidzan srednje velicine (izrezan na kockice) 
Zacini: so, biber, suhi chilly, anis, komorac, cardamom 
Maslinovo ulje 
 
Jogurt sos
1 velika casa grckog jogurta 
2 kasike tahine 
Sok ½ limuna 
So 
1 – 2 cehnice bijelog luka (usitnjenog) 
 
Flat bread, tortilja bread ili kukurne chips tortilje iz kesice 
Zrna šipka i tostirane pinjole
 
Priprema:
 
Na maslinovom ulju predinstati crveni luk, dodati meso, bijeli luk I kockice patlidžana. Dinastajte 15tak minuta pa dodajte začine. Poklopite, povremeno promiješajte. Ni slučajno ne dodajite vodu. 
Ovisno o temperaturi, bit će vam potrebno do 30 minuta ukupno prije nego patlidžan I meso budu spremni. 
 
U medjuveremenu pripremite jogurt sos. 
Sve sastojke za njega izmiješajte i zagrijte na pari kako bi se mirisi proželi. Možete koristiti i mikrovalnu. U tom slučaju zagrijte sos 2X po 20 sec s pauzom izmedju i mijesanjem. U protivnom sos će se zgrušati. 
 
Servirajte uz flatbread, tostirane tortilje ili chips tortilje. Pospite zrnom šipka i tostiranim pinjolima.

Turkey meatballs with ginger

This recipe combines the tastes which are close and known to us with moments of surprise and warmth which ginger brings.

Easy and quick to prepare, this recipe is recommended for those who live fast but eat healthy & home cooked meals!

Ingredients:

Minced Turkey meat
Red Onion (chopped into cubes)
White Onion (chopped into cubes)
Piece of Ginger (size of a small finger, chopped into cubes)
Strand of leek (chopped)
Tablespoon of creme cheese
Olive Oil
Vegedor spice (or alternatively vegetarian spice)
Breadcrumbs
 
Sauce:
Greek yogurt
Creme cheese
Garlic clove 

Process:

Add red onion, white onion and ginger chopped cubes as well as the leek to the olive oil inside the pan  on light heat.  Remove once it softens.

In a bowl of medium size, combine the minced turkey meat, creme cheese, the onions, ginger and which you preheated and then add to it a spoon of Vegedor spice.

Make meatballs from above mix and then roll into breadcrumbs.

Fry in olive oil on medium heat.  Depending on the size of the meatballs, you will need around 5 minutes to fry.

Serve with sauce made out of Greek yogurt and creme cheese.  As a side dish, I would suggest grilled veggies, rice or mash potatoes.

Kolačići od puretine s djumbirom

Ovaj recept kombinira okuse koji su nam bliski i poznati s momentima iznenađenja i topline koje donosi đumbir.

Priprema je jednostavna i brza pa je recept topla preporuka za one koji žive ubrzano ali jedu zdravo i iz domaće kuhinje.
 
Potrebno vam je:

Mljeveni pureći file
Crveni luk (isječen na kockice)
Bijeli luk (isječen na kockice)
Komad đumbira (veličine malog prsta. Isječen na kockice)
Stručak prase
Kašika krem sira
Maslinovo ulje
Začin Vegedor
Prezla
 
Sos:
Grčki jogurt
Krem sir
Cehnica bijelog luka (po želji)
 
Priprema:
 
Crveni, bijeli luk, đumbir i prasu predinstajte na maslinovom ulju i laganoj vatri. Kada omekša sklonite.

U zdjeli srednje veličine pomiješajte mljevenu puretinu, krem sir, luk koji ste prepržili s đumbirom, pa začinite s kašikom začina Vegedor.

Sastojke sjedinite, oblikujte u kuglice, pa uvaljajte u prezlu.

Pržite na srednjoj vatri, na maslinovom ulju. Ovisno o veličini kolačića trebat će vam cc 5 minuta za prženje.
 
Poslužite uz sos od grčkog jogurta i krem sira. Kao prilog predlažem grilovano povrće, rižu ili pire krompirom.
