Lamb, the Middle-eastern way

(Serves 5)

1.5Kg Lamb (shoulder or neck is recommended, single piece, do not cut it into small pieces)
1 Onion
1 Orange

Filling Ingredients
1 Onion
2 Tbs Coriander
1 Tbs Cumin
1 Tbs Olive Oil
1 Tbs Lemon juice
4 Garlic cloves
Handful of Parsley Stems
Zest from one lemon
1 Tbs of Instant Coffee

Topping Ingredients
Parsley leaves (handful), Mint leaves (handful), Pomegranate (one), 7 to 10 Dates, Orange zest, Feta Cheese (200g) & Pistachios (30g).

Process

Pre-heat the oven to 200C.

Season meat with salt and pepper and leave aside.

Blend all filling ingredients together until you get a smooth paste and cover the meat with that paste.

Cut one onion and one orange into half and place them on the bottom of the pot and place the meat with the paste on top of them.

Bake on 200C for half an hour and then lower the temperature on 130C and bake for an additional 3.5 hours.

Once done, take the meat out of the pot and chop it into smaller pieces.  Place the topping ingredients on top prior to serving.

Janjetina na istocnjacki nacin

(Za 5 osoba)

1.5Kg Janjetine (koristiti vrat ili but, iz jednog komada)
1 Luk
1 Narandza

Sastojci za premaz
1 Luk
2 Kasike korijandera
1 Kasika kima
1 Kasika maslinovog ulja
1 Kasika limunovog soka
4 Cehne bijelog luka
Saka persunovih stabiljki
Naribana kora jednog limuna
1 Kasika instant kafe

Jos Potrebno
Saka lista persuna, saka lista mente, jedan sipak, 7 do 10 datula, kora narandze, Feta sir (200g) & 30g pistaca

Proces

Zagrijati rernu na 200C.

Zacinite meso sa solju i biberom i odlozite dok pripremite premaz.

U blender stavite sastojke za premaz i blendajte dok ne dobijete glatku masu kojom cete premazati meso.

U tepsiju za pecenje polozite na pola presjeceni luk i narandzu i na njih polozite meso.

Pecite na 200C pola sata, onda smanjite temperaturu na 130C i pecite jos 3,5 sata.

Kada je meso peceno, isitnite ga na manje komade, stavite na pladanj za posluzivanje a preko mesa stavite persun, mentu, ocisceni sipak, feta sir, datule, izrendanu koru naradze i pistace. Posluzite uz cvrsti jogurt.
