Pasta in mandarin sauce

During mandarin season I use this fruit in saltary as well in sweets. I just love the smell and kick they give to every meal I put it in!

Here is what you wil need for this mandarine sauce:

2 Tbsp butter
Zest from 2 mandarins  
2 Tbsp flour
1 Cup milk
1 Cup broth ( I use beef broth, but you can substitute it with the one you prefer)
Salt, pepper
Juice squeezed out of 1 mandarin

Process:

Heat butter and add mandarin zest. Stir for 1 minute, let the zest release it’s aroma, add flour and keep stirring until flour is changing it’s colour into light gold. Pour milk and broth and stir for 1-2 minutes. Season with salt and pepper and before serving squeeze out mandarin juice into your delicious sauce!

Pasta u mandarina sosu

Tajna je u sosu. U sezoni mandarina trpam ih u sve. slano I slatko. Volim im miris I notu koju daju jeliima.    

Evo sta vam je potrebno za ovaj sos: 
2 Kasike putera,
Izrendana kora mandarine. Ako su manje, narendajte koru s dvije.
2 kasike brasna,  
Solja mlijeka
S
olja temeljca (ja koristim govedji, jednako dobro igra pileci ili povrtni)

o, biber
Sok mandarine 

Proces:

Na rastopljenom puteru predinstajte rendanu koru mandarine. Kratko, samo da pusti svoj miris. Dodajte brasno I njega lagano predinstajte. Potom dospite mlijeko I temeljac. Vrlo brzo ce se sos zgusnuti. Zacinite koristeci samo so I biber.


Pred sami kraj dodajte sok cijedjene mandarine.

Bread Sticks with Sesame

Dip it in favourite jam, or chatney, or even hazelnut spread. Eat it with cheese, oh I love that...or eat it without anything, it is so tasty.

For these Bread sticks with sesame you will need  

10 Tbsp white bread flour 
2 Tbsp semolina 
2 tsp corn flour 
Salt 
Butter 
Y
east 
W
arm water 

Dissolve yeast in glass of warm water.

In medium bowl mix together flour, semolina, salt. Add water with yeast and some more water.  Knead the dough and form a firm ball. Cover and leave to grow (approx. 1h). 

Roll the dough. It needs to be 1 cm thick. Butter the surface and sprinkle it with sesame seeds. Cut the dough into straps and twist each. Place it into a baking sheet, wipe with butter, cover and leave to grow (half an hour). 

Bake on 180C for 20 minutes.

Stapići sa susamom

Ove štapiće sa susamom možete jesti uz slano, slatko ili same. Svakako su prekrasni. 

Potrebno:

10 Kasika bijelog brasna 
2 Kasike griza 
2 Kasike kukuruznog brasna 
So 
Puter
G
erma
T
opla voda 

Najprije rastvorite germu u toploj vodi. 

U srednju zdjelu pomijesajte sve suhe sastojke pa dodajte vodu s germom. Ukoliko vam bude potrebno dodajte jos tople vode. Nakuhajte tijesto u cvrstu loptu. Pokrijte i ostavite da naraste (oko sat vremena).

Razvaljajte na 1 cm debljine, povrsinu premazite puterom i prespite susamom. Isijecite tijesto na trake i svaku posebno uvrnite u tvist. 

Poredajte na pleh za pecenje i ponovno pokrijte i ostavite da naraste. Pecite 20 minuta u zagrijanoj peci na 180 C.

Pumpkin and rosemary soup

Pumpkin is still available in the market place and Thank God for that! Because, after a long working day, nothing can beat comforting taste of nice, creamy pumpkin soup.

This is my pumpkin - rosemary soup. Only few ingredients and easy to prepare.
 Ingredients:
2 Tbsp unsalted Butter
2 Pieces rosemary sprigs
2 Cloves garlic
1 Onion
Beef broth
Butternut pumpkin
Salt, papper,
Cooking cream
Nutmeg
Add rosemary on melted butter and stir. Add chopped onion and chopped pumpkin. Stir and fry for couple of minutes. Add garlic and keep stirring.
Mixture will become dry and you will need to add some water.
Use hot water and add it gradually, by using small cups and only when previous water has evaporated. Cook for 15 minutes and then add beef broth. Cook for 8 – 10 minutes more.

Season with salt, paper and nutmeg. Blend all the ingredients together and serve with few spoons of cooking cream.

Supa s tikvom i ruzmarinom

Jeste li znali da ruzmarin pozitivno utice na pamcenje i imunitet, popravlja raspolozenje, smanjuje bol, stimulira cirkulaciju, odlican je za detox i sprjecava uranjeno starenje? Vise nego dovoljno od jedne travkeJ
Potrebno vam je:
2 Kasike putera
2 Stručka ruzmarina
2 Cehne bijelog luka
1 Luk
Govedji temeljac
Zuta tikva
So, biber,
Vrhnje za kuhane
Muskatni orascic
Proces:

Na rastopljeni malac stavite ruzmarin neka pusti svoj miris. Dodajte luk, isjecenju tikvu I dinstajte. Potom dodajte I bijeli luk I nastavite dinstati. Tikva ce uskoro biti suha I trebat ce vam tecnosti. Koristite vrelu vodu. Dodajite je postepeno, fildzan po fildzan ali tek kada ona prethodna ukuha. Tako dinstajte 15tak minuta. Potopm dodajte govedji temeljac I kuhajte jos 8 – 10 minuta. Zacinite: so, biber I malo muskatnog orascica. Sve izblendajte I sluzite s nekoliko kasika vrhnja za kuhanje.

Chicken in honey, mustard and soya sauce

No, no it's NOT burned, it's just marinated in soya sauce and it's unexplainably delicious.

So, just cut the chicken breast into straps and add:

- 2 Tbsp honey 
- 3 Tbsp mustard 
- Soya sauce 

Leave for half hour and roll each peace of meet in sesame seed. Grill for 2 - 3 minutes each side and that's it! 

Pileci stapići u marinadi od meda, senfa i soja sosa

Ne, nije zagorilo, marinirano je u soja sosu i nevjerovatno je ukusno.  

Isijecite pileca prsa na trake i marinirajte meso u sosu kojeg cete napraviti od: 

- 2 Kasike meda, 
- 3 Kasike senfa 
- Soja sos 

Ostavite makar pola sata, potom svaki komad mesa prevrnite u susamu i przite 2-3 minute sa svake strane.

Squid in tomato sauce

I personally don't like squid at all, I don't find it tasty and I don't like it's texture, but my kids are simply mad about this recipe. 

Ingredients 

Squids 
Butter
G
arlic 
Olive oil 
F
lour 
L
emon 
P
arsley 
S
alt and pepper 

For sauce you will need: 

Olive oil 
Red onion 
G
arlic 
T
omatoes 
T
omato sauce 
Salt, pepper, basil, 
1 Tbsp apple vinegar in one glass of water 

Marinate squids in olive oil, salt and pepper. Turn it onto a floured surface and flip on each side. 

Use butter for roasting, squids will have rich and nicer taste. Cover the pod while resting to protect your kitchen area. Flip them, to get nice, golden colour from each side. When it's almost done, add 2-3 garlic cloves, juice squeezed out of 2 lemons and chopped fresh parsley. 

In the meantime prepare the tomato sauce. 

Heat olive oil and add chopped onion. Stir for few minutes on low temperature, until soft. Add 2-3 garlic cloves, chopped fresh tomatoes and stir for 5- 7 minutes. Add caned tomato sauce and cook on low temperature for 15 - 20 minutes. By that time it will become dry so you need to add a little bit of water. Use the one with apple vinegar inside. If you need some more water, add hot water and stir occasionally. 5 minutes before you take it off the heat, season with salt, pepper, parsley and basil.

Lignje u paradajz sosu 

Moram biti iskrena, ja ne volim lignje. Ne volim im ni okus ni teksturu, ali moja djeca bi ih jela svaki dan. Ovaj recept posebno vole. 

Evo kako ih spremam:

Za sos vam treba:

Maslinovo ulje
Crveni luk 
B
ijeli luk 
P
aradajz

aradajz sos

ersun, bosiljak,

asa vode s jednom kasikom jabukovog sirceta. 

Marinirajte na kratko lignje u maslinovom ulju, soli i biberu. Uvaljajte ih u brasno. Przite na puteru. Poklopite ih dok se prze da zastitite kuhinju i sebe. Prevrnite dok sa svake strane ne budu zlatne boje. Pred kraj dodajte sok 2 limuna, bijeli luk, svjezi persun. Nakon 2 minute sklonite s vatre. 

U medjuvremenu pripremite sos tako sto cete na zagrijanom maslinovom ulju preprziti luk. Kada omeksa dodajte i bijeli luk, potom isjeceni paradajz. Dinstajte 5 - 7 minuta. Dodajte paradajz sos i na laganoj vatri dinstajte 15 - 20 minuta. Povremeno dodajite vodu. Najprije onu u koju ste pomijesali sirce. Ako vam tokom dinstanja treba jos vode, koristite vrelu. 

Pred kraj dodajte so, biber, svjezi persun i bosiljak.

Cottage cheese with baked red pepper and salad

Light and healthy dinner or breakfast, if you like. Easy & delicious! It can be a good meal after sports activities because 1 cup od Cottage cheese contain 28 grams of protein and only 163 Calories :) 

Ingredients:
1 cup Cottage cheese 
Salt, pepper, olive oil, garlic (optional)
2 red peppers 
Salad of choice 

Process: 

Bake red peppers and peel the skin off. Cut peppers in strips, add little bit of olive oil and garlic. 

Season cottage cheese with salt, pepper and few drops of olive oil.

Place cheese as first layer, put red peppers on top and generously garnish wit salad of your choice :)  

Mladi sir s crvenim pecenim paprikama i salatom

Ovo moze biti odlicna, lagana i zdrava vecera. Super obrok nakon treninga napr. jer jedna solja mladog sira u sebi sadrzi 28 gr proteina i samo 163 kalorije! Jednostavno je za pripremiti i vrlo je ukusno.

Potrebno vam je:

Solja mladog sira 
So, biber, maslinovo ulje, bijeli luk (po zelji) 
2 crvene paprika 
Salata po vasem izboru 

Zapecite crvene paprike i ogulite ih. Isijecite i zacinite sa malo maslinovog ulja i bijelim lukom. 

Mladi sir posolite, dodajte biber, kap - dvije maslinovog ulja i stavite ga kao prvi sloj. 

Preko sira polozite papriku i na vrh stavite salatu.

Houmus

I have to admit I don't like confusing mixture of different spices inside Humus. I like clean taste of this Arabic speciality. The way they make it originally. So, this is how I do that: 

Ingredients: 

1 cup chickpeas (humus will taste better if you use dried and cook it by yourself) 
1/2 cup ice cubes 
3 - 4 tbs tahini 
2 - 3 cloves garlic 
5 tbs yoghurt 
4 -5 tbs lemon juice 
Sea salt 
Extra virgin olive oil

aprika and whole chickpeas to garnish 

Rub off the skin of chickpeas. Place them in a food processor. Add ice cubes and start mixing. Add tahini, lemon juice, garlic, yoghurt. Blend until very smooth. Season with salt. In the end you can add 1 - 2 tbsp extra virgin olive oil. 

When serving drizzle with olive oil, garnish with whole chickpeas and sprinkle with paprika. 

Humus

Moram priznati da mi se ne svidjaju razliciti zacini u humusu. Volim cisti, jednostavni okus ovog arapskog specjaliteta. Bas kako ga oni orginalno i spravljaju. Evo kako ja to radim. 

Sastojci:

1 solja leblebije (Humus ce biti ukusniji ukoliko koristie suhe i sami ih skuhate) 
1/2 solje ledenih kocki 
3 - 4 Kasike tahini kreme 
2 - 3 cehna bijelog luka 
5 kasika jogurta 
4 - 5 kasika limunovog soka 
So
Extra djevicansko maslinovo ulje 
Crvena paprika i malo cijelih leblebija za serviranje

Kada skuhate leblebiju i kada ju ohladite, probajte oguliti kozicu s njih. Stavite ih u blender i dodajte led. Pocnite blendati. Postepeno dodajite tahin, limunov sok, luk, jogurt. Blendajte dok ne dobijete finu kremastu teksturu. Od zacina koristite samo so. Na samom kraju dodajte 1 -2 kasike maslinovog ulja. 

Prilikom serviranja poprskajte s malo maslinovog ulja, ukrasite s cijelim leblebijama i pospite s malo crvene paprike.

Spinach salad with roasted pears

This is one of my favourite salads. I make it with strawberries as well, but during this period of the year i serve it with roasted pears. Still taste fenomenal! 

These are the ingredients required for my spinach salad with roasted pears:

Fresh Spinach 
One large pear 
Coconut oil 
Mozzarela or Feta cheese 
Pomegrante and pine nuts for garnish 
Salt and pepper 
Pomegranate dressing 

Heat coconut oil and roast sliced pear until golden.

Place the spinach In a large bowl, add pears & other ingredient. Season with salt, pepper and pomegranate dressing.

Salata sa špinatom i kruškama

Obicno je pravim za veceru. Svjezi persun i pecena kruska se lijepo preplicu i daju jedinstven ukus ovoj salati. Spremit cete je za 10 minuta maximum.

Potrebno vam je:

Svjezi spinat 
Jedna velika kruska
Kokosovo ulje 
Mocarela ili Feta sir 
Silpak i pinjoli 
So i biber 
Dresing od sipka 

Zagrijte kokosovo ulje i krusku pecite isjecenu na kriske. Treba biti zlatne boje s obje strane. 

U zdjelu stavite spinat, dodajte kruske pa ostale sastojke. Zacinite s malo soli, bibera i nekoliko kapi dresinga od sipka.

Home made bread with honey & black cumin seeds

Who doesn't love the smell of home made bread?! I've been making this recipe for years and every time I do, kids are over the moon happy! 
 
Ingredients 
 
700 gr all purpose flour. 
300 gr buckwheat flour 
2 tbsp honey 
salt 
warm water 
yeast 
black cumin seeds
Process
 
In a large bowl, dissolve yeast in warm water. Add honey, salt, and cup of flour. Beat until smooth. Stir in remaining flour, by adding 1 cup at a time to form a nice, bread dough. Turn onto a floured surface and knead until smooth and elastic. You can add few spoons of flour if needed. 
 
Cover and let rise in a warm room until doubled. This process will take at least half an hour. Then knead again and letting it rise again. When it starts rising, turn on to a lightly floured surface and roll it (as you roll a pie dough).
 
Cut it into 4 strips. Put black cumin seeds on top of two of them. Twist each strip separately, and then twist it all together, and form it into round shape. 
 
Place into a baking pot, cover and leave in a warm place for 15 - 20 min. It will start rising (for the third time :)  Preheat the oven and bake for 30 min before covering it with aluminum foil, and continue baking for 20 more minutes.

Check if it's baked with toothpick, if not, you can switch off the oven and leave bread inside for a couple more minutes.

Pogača s medom i ćurokotom

Pravim je godinama i svaki put kada kuća na nju zamiriše, djeca se beskrajno razvesele! 
 
Potrebno vam je:
700 gr bijelog brašna
300 gr heljdinog brašna 
2 kašike meda 
so
germa
ćurokot. 
 
Priprema: 
U duboku zdjelu stavite germu i toplu vodu, te ostavite na minut - dva. Dodajte med, so i šolju brašna. Sjedinite. Postepeno dodajite ostatak brašna neprestano miješajući. Prebacite tijesto na površinu koju ste posuli brašnom i nakuhavajte dok ne dobijete čvrstu loptastu masu. 
 
Poklopite prozirnom folijom i ostavite na toplom mjestu. Kada tijesto naraste do duple mase, ponovno nakuhajte i opet ostavite da kratko stoji. 
Kada primjetite da će opet rasti, razvaljajte na debjinu od cc 1,5 cm pa isijecite na 4 jednake trake. Na dvije stavite ćurokot. Svaku traku uvrnite posebno, pa ih sve skupa uvrnite jednu oko druge i formirajte tijestu u okrugli oblik. Prebacite u pekač, pokrijte i ostavite da raste. 
 
U zagrijanoj pećnici pecite pola sata, pa pokrijte aluminijskom folijom i nastavite peći još 20tak minuta. 
 
Čačkalicom provjerite da li je pečeno, ako se tijesto lijepi za nju ostavite u vreloj ali izgašenoj peći još nekoliko minuta.

Pumpkin - ginger cream soup

On cold, autumn or winter days, nothing can replace a bowl of worm creamy soup. During the pumpkin season, pumpkin soup is very often on my family table. 

This time i am going to give you recipe for my pumpkin - ginger soup.

Ingredients:

Butternut pumpkin, 
One onion 
2 cloves garlic 
Olive oil
Carrot 
Parsley 
Laurel leaf
Piece of ginger 
Celery
Beef broth 
Salt, paper 
Heavy cream

Process:

Heat olive oil, put onion and stir until soft. Add carrot and chopped pumpkin and stir on low temperature at least for 15 min. Eventually you can add some hot water inside. Put in garlic, piece of ginger, celery, laurel leaf and stir for few minutes more. 

Add 1l beef broth, season with salt and paper and left it cook on low temperature for 30 - 40 minutes. Blend until nice and smooth. Before serving add little bit of heavy cream. 

Season with fresh parsley.

Krem supa od tikve i djumbira

Sastojci:
Pola srednje tikve.  
Luk
2 cehne bijelog luka
Maslinovo ulje 
Mrkva
Persun 
2 lovorova lista 
Komad djumbira 
Korjen celera 
Govedji temeljac 
So, biber 
Vrhnje za kuhanje 

Postupak: 

Zagrijte maslinovo ulje i dinstajte luk dok ne omeksa. Dodajte mrkvu i tikvu isjecenu na kocke. Mijesajte na niskoj temperaturi najmanje 15 minuta. Mozete dodati fildzan vrele vode. Dodajte bijeli luk, komad djumbira, korjen celera, lovorov list i dinstajte jos nekoliko minuta prije nego dodate govedji temeljac. Kuhajte poklopljeno, na niskoj temperaturi 30 - 40 minuta. Izblendajte a prije sluzenja dodajte malo vrhja za kuhanje. Ako zelite vegan varijatu koristite adekvatnu zamjenu.
