Chai Vegan Cheesecake

Prep Time 15 minutes, servings 13-16 slices.
 
Ingredients:

For the crust
2 cups almonds 
1 + 1/2 cup pitted dates finely chopped
¼ teaspoon salt

For the cheesecake
2 cups cashews soaked overnight or soaked in hot water for half an hour
½ cup canned coconut milk shaken
1/3 cup coconut oil 
⅓ cup pure maple, or agave syrup
3 tablespoons fresh lemon juice
1 tablespoon vanilla extract or 1 teaspoon vanilla bean paste
1 teaspoon cinnamon
¼ teaspoon grated nutmeg
1 tablespoon fresh grounded ginger
¼ teaspoon salt

Dark chocolate and fresh strawberries for topping. 

Instructions
First prepare the base. Put almonds and dates into a food processor or high-powered blender and pulverize until it comes together into a sort of sticky dough. Press the dough evenly along the bottom of the prepared pan.

Leave in the fridge until making cream top. 

In a high-powered blender just, combine all of the ingredients and blend for about 2 minutes, or until the mixture is silky smooth and creamy. You may need to add a bit more coconut milk or lemon juice to get it to blend smoothly. It is up to you and your taste. 

Pour the smooth filling into the prepared pan over the crust. Smooth out the top and tap the pan hard against the counter a few times to release any air bubbles.

Place in the freezer to set for at least 3 hours or overnight before cutting. 

Top with dark chocolate and fresh strawberries (optional).

Chai Vegan Cheesecake

Vrijeme pripreme 15 minuta. Navedeni sastojci dovoljni su za 13 – 16 komada cheescakea.
 
Za koru vam je potrebno: 
2 solje badema 
1+ 1/2 solje hurmi (ociscenih od kostica)
¼ kasicice soli 
 
Za kremu vam je potrebno: 
2 solje neslanih indijskih orašćića potopljenih preko noci u vodi. Ako ste slucajno to zaboravili napraviti, potopite ih pola sata u vrelu vodu.
½ konzerve kokosovog mlijeka 
1/3 solje kokosovog ulja 
1/3 solje javorovog ili agavinog sirupa
3 kasike soka limuna 
1 kasicica ekstrakta vanilije ili vanilin stapic
1 kasicica cimeta 
1/4 kasicice muskatnog orascica 
1 kasika svježe narendanog đumbira 
1/4 kasicice soli 
 
Proces

Najprije spremite bazu. Vrlo jednostavno, u blenderu sjedinite bademe i hurme. Dobit ćete tijesto koje trebate ravnomjerno rasporediti po lagano nauljenom plehu. Stavite u frižider dok spremite kremu.
Nju spremate tako što ćete sve sastojke za kremu staviti u blender i blendati nekoliko minuta dok ne dobijete finu, kremastu masu. Kušajte i po želji dodajte još malo određenog začina ili limunova soka, po želji.
 
Izlijte kremu preko kore i tresnite plehom nekoliko puta o kuhinjsku podlogu kako biste izbacili eventualne mjehuriće iz kreme. Pohranite u frižider najmanje 3 sata. Ja obicno držim preko noći kako bi se cheescake lijepo ohladio i stisnuo. 
 
Po želji, prelijte slojem tamne cokolade i ukrasite svjezim jagodama,
